2005 High Eden Riesling |

January thunderstorms meant a low Riesling yield from our High Eden vineyard, with the pay-off of exceptional quality fruit.
The result is a super-premium wine, displaying the delicate, fragrant aromas of citrus blossom and rose petals so typical of the Eden Valley region, combined with the crisp, vibrant acidity of zesty lemon peel flavours.
Cellared for the past 18 months, the 2005 High Eden Riesling is developing the lovely flinty and mineral characters which mark a well-balanced aged Eden Valley Riesling. Elegant in texture and with great length of flavour, this wine is aging gracefully into one of the region's best.
Perfectly suited to both Mediterranean and Asian-style dishes, the Eden Springs 2005 Riesling is ideal for summer drinking. Like all premium Eden Valley Rieslings, it also has the potential to benefit from further age and careful cellaring will reap great rewards.
Just 200 cases of this exceptional wine were produced, and are now available exclusively to Eden Springs' on-line and mail order customers.

2006 High Eden Riesling |

The comparatively mild but dry summer left our High Eden vineyard bereft of rain throughout the 2006 vintage. While the vines were a little thirsty, it was a pleasant change from the usual rush to beat the annual January storms and allowed us to harvest at optimum ripeness and flavour. The lack of moisture also kept disease at bay, ensuring the quality of fruit from our already low-yielding Riesling vines was well above average.
That gently ripened, concentrated fruit has in turn produced a stunning wine of great depth and complexity. All the hallmark characteristics of premium Eden Valley Riesling are there, the fragrant rose petal aromas slightly dominating their citrus blossom counterparts in this vintage but with their richness offset by vibrant lemon-peel acidity.
An outstanding example of this much-lauded varietal, the 2006 High Eden Riesling has been cellared for 12 months prior to release and is now, like its predecessors, developing the distinctive flinty and mineral characteristics which mark a well-balanced aged Eden Valley Riesling.
Enjoy now with seafood or tapas, or cellar carefully to develop further. With total production at only 260 cases, it's a rare treat either way.

A remarkably warm spring was followed by a hot summer in which, like 2006, the annual December
rains failed to appear. Luckily for us here at Eden Springs, the warm weather also meant early
ripening of the Riesling grapes, which allowed us to harvest before the vines became too
drought-stressed. Hand-picking further protected the delicate berries from harm, ensuring premium
fruit quality and retaining the distinctive flavour nuances which set High Eden Rieslings apart.
As is usual in a dry year, what we ended up with was smaller, more concentrated berries and decreased
production from our already low-yielding vines. What the 2007 Riesling lacks in quantity, however,
it easily makes up for in flavour, the full-flavoured fruit producing a stunningly aromatic wine with
great depth and complexity. The luscious lemon/lime characteristics so prized in Eden Valley Riesling
are there, along with a soft lemon-peel acidity, all presided over by a heady perfume of orange blossom
and rose petal aromas. It’s an incredible wine now and will continue to surprise over time, no doubt
developing into a remarkable example of aged Eden Valley Riesling.
A perfect match for sushi or prosciutto with melon, this is one to share with fellow aficionados of
this superb but rare cool-climate varietal. Best advice: buy a case or two and enjoy progressively
as it ages.
