The foundation for this wine was laid in the winter of 2003, with good rains giving the vines an ideal start to the growing season. Relatively mild weather leading up to the 2004 vintage offset the early summer heat stress, leaving us with healthy vines and, although relatively small, a crop of full-flavoured, perfectly ripened fruit.
The 2004 High Eden Cabernet Sauvignon displays rich, full-bodied fruit flavours of cassis and dark cherries, layered with tobacco and leafy overtones. The result is an enticing, premium single-vineyard varietal Cabernet, which exemplifies the best in cool-climate red winemaking.
Made entirely from fruit from our 30-year-old High Eden vineyard, Eden Springs High Eden Cabernet will only ever be available in small quantities. Like those before it, however, the 2004 vintage is a wine to savour and enjoy, and a little goes a long way in terms of flavour.
Drink now with lamb shanks and mash, or a genuine Italian wood-oven pizza, or cellar carefully for a year or two and enjoy as it develops further.

Vintage 2005 was both late and short at Eden Springs, commencing in mid-April and finishing
on May 9. While hectic, it ended on a high note, with all our red wine grapes safely harvested
before the first autumn rains. The fine, if cool, weather leading up to vintage allowed a long,
slow ripening for all varieties on the High Eden slopes, and saw the development of intense
colour and flavours in the red wine grapes.
The resulting 2005 High Eden Cabernet Sauvignon is classic Eden Valley in style – an elegant,
medium-bodied wine with a soft but round, silky palate. Rich Cabernet fruit and a fresh cherry
bouquet sit above more complex oak and chocolate flavours, all layered with fine tannins.
Like all Eden Springs wines, the 2005 High Eden Cabernet Sauvignon is a premium, single-vineyard
varietal, estate-grown and hand-picked in our High Eden vineyard. As such, it continues to be a
wine where quality, rather than quantity, is at the core of its production and only 300 cases
are available.
Matured in oak for two years prior to release, this beautifully balanced wine is one to enjoy
both now and well into the future. For an ideal match, try spicy Spanish chorizo, semi-dried
olives or a gutsy, earthy goat’s cheese.
